Tatsoi is called many things, which makes it hard to categorize. It is an Asian green and is often called spoon mustard, spinach mustard or rosette bok choy - it is in the brassica (mustard) family, but has a mild flavor and can generally be used anywhere where spinach is called for in recipes. It grows even quicker than other greens, so you can plant 3-4 weeks before harvest if you just want baby greens. Warm days and cool nights is the best conditions for tatsoi, but it's relatively easy to grow in a variety of conditions.
