Summer Savory (Satureja hortensis) is the better known of the savory species. It is an annual, but otherwise is similar in use and flavor to the perennial winter savory. Summer Savory perfers full sun and rich soil. First sow once the danger of frost is gone. Can start seeds indoors 4-6 weeks before planting, but best results come from direct sowing into garden. It is best to pinch the terminal bud, this encourages branching and prevents the plant from flowering.
This wonderful herb is the most subtle and delicate of all the savories. The aroma is a perfect duet of both Thyme and Mint and is most commonly used to flavor beans or in place or rosemary.
